Warming Winter Soup

This warm bowl of orange veggies is so tasty and the ginger and chilli warms you right up! Also completely vegan 🌱



INGREDIENTS (serves 4)
- 1 large carrot
- 1 small pumpkin (butternut or hokkaido)
- 1 sweet potato
- 1 onion
- Ginger 3-4cm (depending how much u like ginger)
- 1tsp chilli flakes
- 1l veg stock (water + cube)
- 200ml coconut milk
- 1 tbsp tumeric
- Salt, peper, olive oil

1. Turn on the oven to 200. Peel and chop the sweet potato into large chunks. Do the same with the pumpkin, dont forget to take out the seeds! Add to a baking tray and sprinkle with olive oil, salt, pepper & tumeric. Make sure the veggies are covered and in the oven they go for 20 min.
2. Now finely chop the onion and carrot and peel/slice the ginger. Add onion + ginger to a large pot with some hot olive oil. Let it fry on medium for 2 mins, then add the carrot.
3. Season with s+p and add the chilli flakes, cook on low heat until oven veg is done.
4. Once the oven veggies are done, add them to the carrot in the pan. Then add the veg stock, put the lid on and let it bubble for 5 minutes.
5. What carrots are soft-ish, take the pan of the heat and blend your soup untill its super smooth!
6. Finally add the coconut milk, put your pan back on the heat if it has cooled down. Now it’s ready to eat! Enjoy!
