Swedish meatballs

Whether this transports you to happy days in the big blue and yellow furniture store or you're craving some comfort food - this is definitely a delicious wintery meal! 🇸🇪🧆



INGREDIENTS (serves 2)
Cranberry sauce:
- 250g cranberries (can be frozen)
- 100g pomegranate seeds
- 150g sugar
- 100ml water
- 1 cinnamon stick 1 star anise

Meatballs:
- 500g ground beef or veggie mince
- 50g breadcrumbs/panko
- 1 egg
- 1 white onion
- 1 tsp nutmeg
- 1 tsp allspice ("speculaas kruiden")
- Salt/pepper

Sauce:
- 50g butter
- 2-3 tbsp flour
- 100ml cream
- 300ml stock (beef or veggie)

Mashed potatoes:
- 500g peeled potatoes
- knob of butter
- splash of cream
- salt/pepper

Cucumber salad:
- 1/2 cucumber in slices
- salt, pepper, splash vinegar.

1. Add all cranberry sauce ingredients to a pan and bring to a boil, once boiling and cranberries are getting soft, set to low heat and simmer for 10 minutes, add water if it gets to thick. Use wooden spoon to squash any cranberries intact. Leave to cool, remove cinnamon stick & star anise before serving.
2. Slice cucumber into thin strips. Add to a bowl with vinegar, salt & pepper. Keep in fridge until serving.
2. Grate an onion with a grater, add to a bowl together with all other meatball ingredients. Mix with your hands and make small balls, should make around 15-20 balls.
3. Heat a skillet with oil and fry meatballs in batches. Should be brown and cooked on all sides. Set aside on a plate.
4. Peel and boil potatoes until suuuuper soft (around 20 mins). Drain and mash! Add butter and cream and mix, you can add more untill you reach desired consistency. Season to taste!
5. Make the sauce in the meatball skillet. Melt the butter, then stir in the flour until you get a thick roux. Bit by bit add the stock until you get a saucy consistency. If you add too much stock let it simmer down a bit longer. Add cream and simmer for 1-2 more minutes.
6. Add the meatballs to the sauce to heat them up again 3-4 mins.
7. Time to serve, the meatballs, mash, cucmber salad and cranberry sauce. Add some fresh chives for garnish and enjoy!✨
