Spiced cauliflower steaks with creamy tahini sauce

Showstopping centerpiece right here 💥Cauliflower is such a versatile vegetable and gets such great hearty taste from being baked in the oven, combined with the creamy sauce it’s just … yum 🤤

INGREDIENTS (serves 2)
- 1/2 cauliflower
- 2 tsp Ras el hanout spices
- 125g shiitake mushrooms
- 1 tbsp soy sauce
- 3 tbsp tahini
- 2 tbsp Splash of water
- 2 tbsp yoghurt (greek or full fat)
- 1 lemon
- Parsely
- Olive oil
- Salt, peper, chili flakes
- Optional: Mint for garnish

1. Set oven to 180-190 degrees. And line a baking tray with baking paper.
2. Remove leaves from cauliflower. Slice half of a cauliflower lengthwise (from head to stalk) you should get 3 or 4 big slices maybe with some smaller parts. Spread then over the baking tray
3. In a small bowl mix ras el hanout with a good splash of olive oil, salt and pepper and combine. Pour over to cover the cauliflower (or use a baking brush) on both sides. Pop in the oven for 20-25 minutes until the edges become charred.
4. Slice shiitake mushrooms and add to a frying pan on medium heat with a little bit of oil, fry until they start browning (after 5 mins) add the soysauce and stir, fry for another 2 mins and set aside.
5. In a bowl combine tahini, lemon juice, water, yoghurt, chopped parsley, splash of olive oil, chili flakes, salt & pepper!
6. On a serving plate or dish add a layer of creamy tahini sauce (about 80%) place the cauliflower steaks on top and then add the mushrooms then top with final amount of sauce and garnish with some mint! Serve & enjoy ✨
