Lemon ricotta linguine with smoked salmon

Spriiiing is in the air πŸŒΈπŸ‹ so I feel like all things citrus. Starting with this creamy fresh pasta dish.



INGREDIENTS (serves 2-3)
- 200g ricotta
- 300g linguine
- 200g smoked salmon flakes
- 200g spinach
- 2 lemons (juice & zest)
- 50g grated parmesan (some extra for topping)
- Capers for topping
- Olive oil
- Salt & pepper

1. Combine ricotta, juice and zest of 1 1/2 lemon, grated parmesan, splash of olive oil, salt and pepper.
2. In a large pan boil some water with a pinch of salt add you linguine and cook them 1 minute under al dente. Save some pasta water in a mug. In the same pan then add your spinach to the water and cook for 1 minute.
3. Drain linguine and spinach and add back to the pot. Now add in your ricotta mix and a splash of pasta water. Mix until your pasta is covered in sauce.
4. Time to plate! Top linguine with salmon flakes, parmesan, capers and a drizzle of olive oil, enjoooy✨
