Melanzane towers

The slighty crispy aubergine 🍆 , the tangy tomato 🍅 and melted mozza 🧀- these simple ingredient stacks are just so good as a side or as main.


INGREDIENTS (for 10 stacks)
- 2 aubergines
- 2 large tomatoes
- 2 mozzarellas
- 3 tbsp cornstarch
- 100ml olive oil (or sunflower)
- Fresh basil
- Grated parmesan
- Salt/pepper

1. Slice aubergines in 1cm thick slices. You shouls get around 10 slices from one. On a plate add cornstarch and coat the aubergine slices one by one. Heat a pan with a good layer of oil (you will need to add more with eacht aubergine batch or when pan is dry). Fry a few slices at the same time. They should be golden brown each side. Set aside on plate, season with salt and pepper.
2. Set oven to 180. Slice tomatoes and mozzarella. Take a baking tray with paper and start stacking! It goes: aubergine, tomato, mozza, aubergine, salt/peper, parmesan & repeat!!
3. Pop in the oven for 10-12 minutes. The mozza might get runny, just leave in the oven for a few extra minutes. If the stacks fall apart, dont worry you can fix them when they come out!
4. When they are done, top with a fresh basil leaf! Serve them with a nice salad or pasta and enjoooy ✨
