SPRING SUPER GREEN SALAD
As green as it gets! Enjoy this salad as a meal or as a side dish. 🥑🌱🥦🥗🥒🥬🫒
INGREDIENTS (2 large servings or 4 small)
- 100g baby asparagus
- 150g broccoli florets
- 100g mixed salad
- 1/2 chopped cucumber
- 1/2 sliced avocado
- 75g chickpeas
- 1/2 lemon (juice)
- 1 tbsp olive oil
- Salt & peper
- Optional: green olives, sunflower seeds
1. Set oven to 180. Add broccoli and aspargus to a baking tray sprinkle with olive oil and balsamico. Roast for 12-15 mins. Let the veg cool down.
2. Asemble salad with with the cold veg at the bottom and roast veg on top. Dress with olive oil and lemon juice & season to taste! Serve and enjoy! ✨
