Roasted tomato linguini with burrata

Simple, delicious and summery. The flavours you’re craving without spending aaages in the kitchen!



INGREDIENTS (serves 2)
- 250g cherry tomatoes
- 1 burrata (or 2 small ones)
- 300g linguini
- 125ml heavy cream
- 150g rocket salad
- 2 garlic cloves
- handful fresh basil
- olive oil
- balsamic vinegar
- salt & pepper!

1. Set oven to 180. Add tomatoes to a baking tray with the garlic cloves (peeled), a splash of olive oil & balsamico. Season with salt & pepper. Pop in the oven for 20mins!
2. Take the tomatoes from the oven, and add to a blender together with the cream, basil, some olive oil, salt & pepper. Blend until smooth.
3. Cook linguini al dente according to the package. Save some pasta water. When linguini is done add the tomato sauce and a tiny bit of pasta water if needed amd combine!
4. Time to plate! Add the tomato linguini to a plate top with some rocket salad and the burrata. Combine the soft interior of the burrata with the tomato sauce and mission = accomplished of reaching food heaven! Enjoooy ✨
