Blueberry Meringue Clouds
BLUEBERRY MERINGUE CLOUDS ☁️🫐✨
Meringue + blueberries + cream = heaven. An eye catching dessert with the purple whipped cream coloured with some of the blueberry juice! For this dessert you need only 4 main ingredients and a bit of patience, but can all be made in advance so perfect for a stress free dessert for xmas!
PS. do not advise this recipe without an electric mixer, unless ur looking for an arm workout.
INGREDIENTS (serves 8)
- 4 egg whites
- 220g sugar (for meringue) + 100g sugar (for sauce)
- 250ml heavy cream (slagroom)
- 500g frozen blueberries
- 1 tsp vanilla essence
- pinch of salt
1. Set oven to 120. Split 4 eggs and add to a large bowl (keep the yolks for brushing on pastry or a carbonara!) add a pinch of salt and mix until you get stiff peaks!
2. Then slowly add the sugar + vanilla essence in the egg white mixture and mix some more until the sugar is incorporated.
3. Make cloud shape blobs with the egg whites using 2 spoons on a baking tray lined with parchment paper. Pop in the oven and turn it down to 90 degrees. For 1,5 hours. Then turn off the oven and leave them to cool for another hour or so. Try not to open the oven whilst they are in there. They should be dry and crunchy on the outside and some thicker parts might still be nice and gooey!
4. In the meantime you can prep the cream and sauce. Add blueberries to a pan and add the 100g sugar let simmer on medium heat until the blueberries start to break down. Turn off the heat and let it cool. Save 2 tbsp of purple blueberry juice to mix with the cream.
5. Whip the cream until nice, thick creamy consistency (careful not to overwhip!). Add the blueberry juice and very gently with a spatula fold in the the purple, don’t stir to harshly or the cream will deflate! I also like to not mix it in completely to leave strands of darker purple for contrast.
6. Plate with meringue on the bottom, cream and a spoon of blueberries and enjoy! I forgot to get some mint to garnish with, but if you’re looking for an extra splash of colour add some!
