Sweet potato & Goats cheese swirl
SWEET POTATO & GOATS CHEESE SWIRL 🎄
Topped with pecan nuts and honey - this delicious veggie dish is bound to be a showstopper on any xmas dinner table!
INGREDIENTS (serves 4 -5)
- 3 sweet potatoes
- 200g spinach
- 1,5 packets of filo pastry (I had small sheets I put together to make a long rectangle)
- 125g soft goats cheese
- handful pecan nuts
- 1 tbsp honey
- 3 spring onions
- handful fresh parsley
- 1 tsp cumin
- 1 tsp cayenne
- knob of butter
- olive oil, salt, pepper
1. Heat oven to 200. Add sweet potatoes and make holes in them with a fork. Add to the oven for at least 25-30 minutes, until juices ooze out and they are soft.
2. Cook down the spinach in a frying pan with some olive oil. Start with a handful and gradually add more as it wilts in the pan.
3. When the sweet potatoes have cooled a bit, cut them open and scoop out the flesh and add to a bowl. Add the spinach, chopped spring onions & the parsley. Combine well and season to taste with cumin, cayenne, salt and pepper.
4. Set oven to 180. Lay out the filo pastry so it makes a long rectangle facing you horizontally. Add the potato spinach mixture + crumbled goats cheese in a line at the bottom of the filo pastry so you can easily role it into a long cigar shape. You don’t have to make one large rol, you can make smaller ones and add them to the swirl if that’s easier!
5. Add the filo rolls in an oven proof dish, start swirling form the middle and then outwards.You can tuck in any bits sticking out. Brush over some melted butter to make it nice and golden. Then pop in the oven for 20 minutes - until the top is a nice golden brown!
6. Toast some pecan nuts in a dry pan - keep an eye on them so they don’t burn!
7. When the pie is ready, top with pecans and honey! Serve in the center of you xmas table and enjoy! ✨
