Traybake: cod, greens + white bean puree
Just a quick & healthy weekday dinner for ya! Fish and veg from the oven, can’t go wrong there :)
INGREDIENTS (serves 2)
- 1 courgette
- 200g broccolini
- 2 cod filets
- 2 spring onions
- 1 garlic clove
- 175 g cannelini beans
- 1 tsp of mustard
- Fresh parsley
- Olive oil, salt & pepper
1. Set oven to 180. Slice courgette and add to a baking tray lined with baking paper. Add the broccolinis. Roughly chop the spring onion & garlic and add to the tray. Sprinkle some salt and pepper + drizzle olive oil over the veg and pop in the oven for 10 mins.
2. Take the tray out and add the cod fillets, season with some salt & pepper. Add back to the oven for another 12 mins until the fish is done.
3. In the meantime add the beans to a blender with the mustard, and a tbsp of olive oil and blitz until smooth.
4. When the traybake is ready take out the spring onion and garlic and add to the bean purree.
5. Time to serve! Add the purre to the plate and serve the cod and veggies on top! Enjoooy ✨
