Traybake: roast salmon, potatoes & veg

In my traybake era: a weekend roasty coming right up! With a buttery garlic sauce to finish the dish off



INGREDIENTS (2 pers)
- 300g salmon
- 300g fingerling potatoes
- 2 parsnips
- 1/2 broccoli
- 50g butter
- Fresh rosemary
- Fresh parsley
- 2 garlic cloves
- 4 slices of lemon
- Salt & pepper

1. Set oven to 190. Boil the potatoes for 10 min. Drain the water and add them to a paper lined baking tray. Squish the potatoes with a cup/glass. Sprinkle with olive oil, salt, pepper, chopped garlic and rosemary. Pop in the oven for 15mins.
2. Now add the chopped parsnip & broccoli and put back in the oven for 8 minutes.
3. Now add the salmon seasoned with salt, peper, some olive oil ans top with some lemon slices. Back to the oven again for a final 15-17 mins until the salmon is cooked and the veggies are browning.
4. In the meantime make the butter sauce: melt butter in a pan, add grated garlic, lemon zest and chopped fresh parsley.
5. Serve your salmon and veg with the butter sauce and enjoy ✨
