Tagliatelle with Miso Cacio e Pepe
A fusion twist on the Roman classic cacio e pepe (cheese and pepper). The miso really adds such a hearty kick its so good! I had this yesterday and I’m craving it again. Traditionally there is also no butter in there too but it makes it so much more creamy and allows the miso to really turn into a sauce.
INGREDIENTS (serves 2)
- 250gr tagliatelle (for homemade see part 1!)
- 200gr pecorino cheese
- 1 (large) tbsp of ground black pepper
- 1 tbsp miso
- 80gr butter
- Optional: chives for topping
- 2-3 ladle spoonful’s of pasta water
1. Grind your pepper – you can do it with a mortar & pestle or with a normal grinder. And grate your pecorino cheese. Set aside.
2.Add water to a large pot with a pinch of salt and bring to a boil. Add the tagliatelle. Cook for less time than the package says as we are going to cook the pasta is going to cook a little more in the sauce! For fresh pasta only cook for a minute or two before transferring to a pan, for store bought pasta cook with about 3-4 mins to spare. IMPORTANT: don’t throw away the pasta water!
3. Now whilst you’re cooking the pasta the sauce comes together pretty quick so make sure you have everything nearby. Whilst the pasta is cooking add pepper in a large saucepan pan on medium heat and toast for about 2 minutes. Your going to be able to start smelling the pepper very strongly.
4. Next add butter and miso! Stir well the ingredients are melted into a sauce and is starting to bubble for about 2 ½ minutes.
5. Take a large spoon or ladle and add 2 scoops of starchy pasta water to the pan. It should make a sizzling sound.
6. Add your tagliatelle, incl another spoon of pasta water. Stir until the sauce thickens a bit for about 2 mins.
7. Add all of the pecorino cheese including another spoon or two of pasta water. Combine until cheese is melted and you are getting a thick glossy sauce. If necessary add some more pasta water and let itcook for 1-2 more mins.
8. Time to plate! Divide over 2 bowls, top with some fresh chives and dig in! Enjoy :)
