Spicy Peanutbutter Noodz
Spicy peanutburrer noodles with shiitake & broccolini. Just what your craving after a long day. Creamy, peanut buttery noodles and so easy to make! 🍜🌶️
INGREDIENTS (serves 2)
- 3 tbsp of peanutbutter
- 2 tbsp of soy
- 1 tbsp of honey
- 1/2 tbsp rice vinegar
- 1 tsp chili oil/sambal oelek
- 1 garlic clove grated
- 200g ramen noodles
- 150g shiitake mushrooms
- 150g broccolini (bimi)
- Tbsp butter
- 200ml saved noodle water
Topping:
- crispy onion/spring onion/chilli flakes
1. Lets prep the sauce, combine the peanut butter, soy, honey, vinegar, sambal and garlic. Dont worry if its a thick sauce we will loosen it up later when mixing with noodle water.
2. Slice the shiitake mushrooms. Melt butter in a frying pan, add mushrooms and fry until they start to brown after 2-3 mins on medium heat. Add a splash of soy to season them and cook off the liquid. Turn off heat.
3. Put on 2 pots with boiling water, cool the bimi for 7-8 minutes and the ramen noodles according to package. When draining save the starchy noodle water.
4. Add the noodles to the mushroom pan (on low heat) and add the peanut sauce along with a splash of noodle water to loosen up the sauce and mix with the noodles. You can keep adding the water until you have a nice glossy, creamy sauce.
5. Time to serve! Top your noodles with some crunchy broccolini and allllt he toppings and enjoooy ✨
