Citrus salad with chioggia beet & orange

This colourful salad is just the fresh flavour you need next to the other dishes during a festive dinner or the perfect summer day light lunch to cool off. And can I say that Chioggia beets are just the prettiest veggies out there, the pink and the pattern is so cool.


INGREDIENTS (serves 5-6)
- 3 Chioggia beets
- 3 Oranges
- Feta cheese
- ½ pomegranate (seeds)
- Mint leaves
- Olive oil
- ½ Lemon
- 1tbsp Honey
- 150ml white vinegar
- 2tbsp sugar
- Splash of water
- Salt & peper

1. If you have a mandoline, now is the time to shine. If not get out a large sharp knife. After peeling the beets, very finely slice them
2. Place the sliced in a bowl and pickle them with the vinegar, sugar and some water. Do this at least an hour before serving.
3. Peel the oranges and cut into slices.
4. For the dressing combine, olive oil, lemon juice, honey, salt & pepper.
5. Time to plate: Lay the beets and oranges out on a large serving plate (slice of beet, slice of orange and so on). Top with feta, pomegranate seeds and the dressing. Finally top with some mint leaves & enjoy!
